Why You Should Cover Your Cake Board With Fondant?

Did you cover the cake board? When you look at someone else's cake and marvel at how professional and perfect it looks, how many times have you seen it sitting on a silver bare cake board?

Covering a cake board is a quick, easy and essential finishing touch to give your cake a more professional look. Whether your cake is a bare, buttercream, gauche or fondant cake, a covered cake board can not only make your cake more gorgeous, but also add to the design and overall look of your creation.

Basically, it's all about finishing your design. A good design should draw your eye to the highlights and parts of the cake you spend the longest time and want to show off, while everything else fades from attention. So if you took the time and effort to design a beautiful cake, why ruin it by making the silver plate sitting on it the first thing people see?

You can even add your fondant to your design...make it part of the cake. This is an opportunity to expand and compliment your design. While we're at it, it's nice to use a coordinating ribbon or fondant to do everything for the finishing touch.

How to use the fondant Cover your Board?

Start by cleaning your board with alcohol, usually using vodka on a kitchen towel to do this. Although the boards are covered with food-safe foil, you don't know where they're stored until you buy them. They can fall on the floor, be stored on the bottom shelf where the dust has been raised, or even be stored on a dirty shelf. Just a quick wipe with alcohol will remove any germs.

Most people never eat fondant on the board because most people don't like fondant. But don't rely on it. There is often one person who loves fondant and will pick every bit, so make sure your board is clean!

Then using cooled boiled water or more vodka, put a very fine layer of water on the board - still do it with a kitchen towel I think. That's what gummy will stick to, too.

Roll out the fondant to about 2-3mm thick.

Place the fondant on the board and using the smoothing tool, run over the fondant to make sure there are no air bubbles underneath.

Using a sharp knife, run flat on the edge of the board and cut off any excess fondant.

Then cut a hole in the top where the cake is. Make sure the hole is at least 1 inch smaller than the cake. I do this for two reasons, firstly it wastes fondant and secondly it allows you to stick the cake directly to the board.

Finally, finish the edges of the cake board by gluing color-coordinated ribbons with glue sticks.

So, here’s a few essentials you need to know:

Cake boards come in many thicknesses, the thinnest being "Cut Card". These are either covered with silver foil or coated with a non-stick but food-safe coating. These are for professionals to use between layers if the layers are not too heavy or under the cake which will eventually transfer to the cake drum. It is the cheapest but weakest board that can handle and move the cake easily.

the normal thickness is the 3mm cake board. These are usually thick cards coated with food-safe silver foil. If you buy a circuit board from a supermarket, you usually get something like this. Most professionals will use this thickness between large cake layers.

Lastly is the cake drum. They are made from multiple layers of cardboard or corrugated board and again covered with food-safe foil. They are thicker, between 10-12mm, and are what professionals always use to finish cakes. While the other thicknesses use the same size as the cake so it can't be seen, the drum is always bigger than the cake and that's what I call coverage.

What does "override" mean?

Professionals always place the cake on the cake drum. It is always larger than the cake, so the cake can be picked up and moved without worrying about damaging the actual cake. This is the drum we want to "cover".

When we say cover, it mean a layer of fondant on top. From time to time, you may wish to add a layer of whipped cream to a custard cake, as does gauche. fondant, however, it's smoother and neater.
